Frito Corn Salad… one of my favorites! It’s always a “can you share the recipe” kind of salad. Make it the night before and add the chips right before serving.
Frito Corn Salad

2 C. whole corn, drained
1 C. chopped green bell pepper
1/4 C. chopped red onion
2 C. shredded cheddar cheese
1 C. mayo
1 bag Frito chili cheese or honey BBQ corn chips, crushed
Directions
- Combine ingredients and refrigerate overnight or for several hours.
- Before serving, mix-in crushed chips.
