1 C chopped Pecans
1 C firmly packed Brown Sugar
1/2 C All-Purpose Flour
2 large Eggs, room temp
1/2 C Butter or Margarine, melted and slightly cooled
Foil baking liners – foil is highly recommended to prevent sticking
Directions
- Preheat oven to 350 degrees.
- Place seven foil baking liners in a standard size muffin pan. Spray liners with cooking spray.
- Combine pecans, brown sugar and flour in a large mixing bowl.
- In a separate bowl, beat eggs until foamy. Stir in melted butter. Add to dry ingredients and stir until just combined.
- Fill each liner with a 1/4 cup of batter.
- Bake 20 to 25 or until done. Remove pans and cool on wire rack.
Notes
- This recipe doubles easily and the extras freeze well.
