If you were to ask me the ONE thing my family couldn’t live without it would be these Peanut Butter Oatmeal Bites! I’m not kidding…I’ve even mentioned to my husband, “if anything happens to me the oatmeal bites recipe is in the kitchen junk drawer.” 🙂 I used to make a new batch every week, but then decided to triple the original recipe and store half in the freezer. This recipe makes about 60 peanut butter bites. Halve the recipe if you would like to mix in your standmixer.
Oatmeal Peanut Butter Bites

Ingredients
5 C Rolled Oats
1 1/3 C Chocolate Chips or Mini M&Ms or combo of both
2/3 C Rice Krispie Cereal, optional
¼ C Flaxseed Meal or Chia Seeds, optional
3 C Peanut Butter, creamy
1 1/3 C Honey
Directions
- Combine dry ingredients in a large bowl.
- Mix in peanut butter and honey.
- Using a wooden spoon, stir until thoroughly combined.
- Use a cookie scoop (I use a 1.5 TBSP cookie scoop) to form the energy bites.
- Place energy bites in a large rectangular tupperware container. Use wax paper between layers. Refrigerate for 2 hours before enjoying. These can also go directly in the freezer. Thaw overnight in the fridge.
