Pecan Pie Muffins

These muffins are perfectly tender with the consistency of pecan pie in every bite and only FIVE ingredients! This recipes makes a small batch, but feel free to double for a crowd.

Ingredients

  • 1 C chopped Pecans

  • 1 C firmly packed Brown Sugar

  • 1/2 C All-Purpose Flour

  • 2 large Eggs, room temp

  • 1/2 C Butter or Margarine, melted and slightly cooled

  • Foil baking liners – foil is highly recommended to prevent sticking

Directions

  • Preheat oven to 350 degrees.
  • Place seven foil baking liners in a standard size muffin pan. Spray liners with cooking spray.
  • Combine pecans, brown sugar and flour in a large mixing bowl.
  • In a separate bowl, beat eggs until foamy. Stir in melted butter. Add to dry ingredients and stir until just combined.
  • Fill each liner with a 1/4 cup of batter.
  • Bake 20 to 25 or until done. Remove pans and cool on wire rack.

Notes

  • This recipe doubles easily and the extras freeze well.
