Strawberry Oatmeal Bars

Oh, Strawberry Oatmeal Bars….how I do love thee. I just wish you were fat-free. 😀 I’ve made these bars for years and they’re always a crowd pleaser. The buttery-streusel crust and strawberry preserves make them irresistible.

These bars come together quickly using a food processor. A pastry cutter works as well, but takes a little more elbow grease. While you have your food processor out (and already messy!), make an extra batch of the crust mixture and throw it in the freezer. It freezes well and makes for a super easy last minute dessert.

In the bowl of a food processor, combine the flour, oats, brown sugar, baking powder, and salt. Pulse a couple times to bring ingredients together.
Add in your COLD butter and pulse 8-10 times, until you have coarse crumbs.
The miracle of the food processor…
Dump contents from the food processor into a large bowl and toss to incorporate.
Pour half of the mixture into a buttered 9×13 and press lightly to form a crust.
Glob on the strawberry preserves. I find it easiest to drop spoonfuls of jelly all over the crust before trying to spread it out.
With a butter knife, gently spread the preserves over the crust. It’s ok if a bit of the crust gets mixed in with the jam.
Sprinkle the remaining oat mixture over the preserves and gently spread mixture out to form the top crust. Pop in the oven and bake 30-35 minutes until light golden brown!
YUM….allow to cool and then cut into bars. Locate your fat pants.

Ingredients

  • 1-3/4 sticks Cold butter, cut into cubes

  • 1-1/2 C All-purpose flour

  • 1-1/2 C Oats (quick or rolled)

  • 1 C packed Brown Sugar

  • 1 tsp Baking Powder

  • 1/4 tsp Salt

  • 18 oz jar Strawberry Preserves

Directions

  • Preheat oven to 350 degrees. Butter a 9×13 casserole dish.
  • Cut butter into cubes and return to fridge to keep cold.
  • In the bowl of a food processor, add all of the dry ingredients. Pulse a few times to incorporate.
  • Add butter. Pulse 8-10 times until your mixture resembles course crumbs.
  • Pour mixture into large mixing bowl and toss to incorporate. Check for any large pieces of butter and crumble with fingers.
  • Pour half of the mixture into baking dish. Press lightly to form bottom crust.
  • Drop spoonfulls of preserves over crust in several sections. Use a butter knife to gently spread preserves over crust.
  • Top with remaining oat mixture and pat lightly to form top crust.
  • Pop in oven for 30-35 minutes until light golden brown.
  • Cool completely before cutting.
