Cinnamon Biscuits

It’s cold and all I want to do is bake different variations of biscuits. These cinnamon biscuits are sure to warm you up on a chilly day!

Cinnamon Biscuits
Yields – 15

1 1/2 C All Purpose Flour
1 1/2 C Sifted Cake Flour
1 Tbsp Baking Powder
1 tsp Salt
1/4 C Sugar
1 1/2 tsp Cinnamon
3/4 C cold Butter, cubed
1 C Milk or Buttermilk
1 1/2 Tbsp Butter, melted (for brushing over biscuits)

Icing –
1 C sifted Powdered Sugar
1 tsp Pure Vanilla Extract
1 1/2 Tbsp Milk

Preheat oven to 400 degrees. Line a baking sheet with a slipat mat or parchment paper.

In a large bowl, stir together the flours, baking powder, salt, sugar and cinnamon. Add cubed butter to dry ingredients. Toss to coat. Using a pastry blender or fork, work butter in until mixture is crumbly.

Stir in milk just until dry ingredients are moistened.

Turn dough out onto a lightly floured surface and knead 4 to 5 times to bring it together.

Pat dough out to a 1-inch thickness and cut with a 2-inch biscuit cutter (a glass can be used, but they won’t rise as high). Place on baking sheet and brush with melted butter.

Bake for 15 minutes or until lightly browned.

Make the icing by combining the powdered sugar, vanilla and milk. Drizzle over warm biscuits.
