Georgia Peach Salad

Ya’ll … this Georgia Peach Salad is everything you would want in a summer salad! A little sweet with a hint of cheddar to balance it all out. I made a white balsamic honey dressing using the Ariston White Balsamic from Koch’s General Store. It’s delicious!

This Georgia Peach Salad is everything you would want in a summer salad! A little sweet with a hint of cheddar to balance it all out.

Ingredients

  • 4 C. Spring Mix

  • 1-2 Georgia Peaches, sliced thin

  • 2 Strawberries, halved & sliced

  • Blueberries, just a sprinkle

  • Red onion, sliced thin to taste

  • Troyer Blueberry Cheddar Cheese, shaved with a veggie peeler or diced

  • Fresh mozzarella pearls, (find this in the deli section at most grocery stores)

  • Toasted pecans, optional

  • Salt, pepper, granulated garlic to taste

  • White Balsamic Dressing –
  • 2 Tbsp White Balsamic

  • 1 Tbsp Honey

  • 1/2 C. Extra-virgin olive oil

Directions

  • Combine the salad ingredients in a large bowl. Sprinkle with salt, pepper and granulated garlic to taste (not too much… you can always add more!).
  • To make the dressing – In a mason jar with a lid, combine dressing ingredients. Shake, shake, shake to incorporate. 😉 Drizzle over salad and serve immediately. Store leftover dressing in the fridge.
