Ya’ll … this Georgia Peach Salad is everything you would want in a summer salad! A little sweet with a hint of cheddar to balance it all out. I made a white balsamic honey dressing using the Ariston White Balsamic from Koch’s General Store. It’s delicious!

Ingredients
4 C. Spring Mix
1-2 Georgia Peaches, sliced thin
2 Strawberries, halved & sliced
Blueberries, just a sprinkle
Red onion, sliced thin to taste
Troyer Blueberry Cheddar Cheese, shaved with a veggie peeler or diced
Fresh mozzarella pearls, (find this in the deli section at most grocery stores)
Toasted pecans, optional
Salt, pepper, granulated garlic to taste
- White Balsamic Dressing –
2 Tbsp White Balsamic
1 Tbsp Honey
1/2 C. Extra-virgin olive oil
Directions
- Combine the salad ingredients in a large bowl. Sprinkle with salt, pepper and granulated garlic to taste (not too much… you can always add more!).
- To make the dressing – In a mason jar with a lid, combine dressing ingredients. Shake, shake, shake to incorporate. 😉 Drizzle over salad and serve immediately. Store leftover dressing in the fridge.
